1 1/4 cups granulated sugar
1/4 cup butter or margarine
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 cups cranberries, fresh or frozen, coarsely chopped
Preheat the oven to 350 ° F.
Place 12 paper muffin cups into a muffin tin.
In a mixing bowl, cream together sugar and butter.
Add one egg at a time and beat the batter.
In a separate bowl, mix together flour baking powder, and salt.
Alternately, add dry ingredients and milk to the creamed sugar mixture.
Blend in chopped cranberries.
Spoon batter into muffin cups.
Bake in the oven for 25 to 30 minutes.
Test with a toothpick for doneness.
Remove from the oven and place on a cooling rack.
