Carrots Peabody is a very old recipe. It is quick and easy to make. And, it, and tastes oh so good.
Did You Know? Joe Atherton from the UK holds the record for the world’s longest carrot. He grew a 19 feet 1 7/8 inch carrot in 2007. And in 2017, Chris Qualley from Minnesota broke the world record for the heaviest carrot at 22 pounds 7 ounces.
8 carrots
2 Tablespoon grated onion
1/2 cup mayonnaise
1/4 teaspoon black pepper
1/3 cup breadcrumbs
2 Tablespoons horseradish
1/2 teaspoon salt
1/4 teaspoon paprika
Wash and peel carrots.
Cut carrots into thin strips.
Cook carrots in boiling water until tender.
Place carrots on greased square casserole pane in one or two layers.
Mix together grated onions, mayonnaise, pepper, bread crumbs, horseradish, salt, and paprika.
Spread on top of carrots, a and between layers.
Bake in a pre-heated oven at 375 ° F for 15 minutes.
Serve hot.
