4 ripe tomatoes
1/2 cup breadcrumbs
2 cloves garlic, sliced
2 tablespoons chopped parsley
2 tablespoons olive oil
salt and pepper to taste
Preheat the oven to 475 ° F.
Cut tomatoes in half horizontally, and place cut side up in a shallow roasting pan.
Spread garlic slices on the tomatoes.
Add salt and pepper, to taste.
Mix together Parsley and breadcrumbs in a bowl.
Drizzle olive oil over the tomatoes.
Roast in the oven for 25 to 30 minutes, until bread crumbs turn a golden brown.
