Crust Ingredients:
1 cup all-purpose flour
1/3 cup shortening
ice water
Pie Filling Ingredients:
6 good-sized peaches, peeled, remove the pit, and slice.
3/4 cups sugar
1/2 cup flour
1/3 cup butter
1/2 cup sour cream
2 Tablespoons tapioca
2 Tablespoons lemon juice
To make Crust:
Mix together flour and shortening.
Add ice water as needed to make a smooth, thick dough.
Roll out dough and line a greased pie pan.
To make Pie:
Preheat the oven to 425 ° F.
In a bowl, crumb together sugar, flour, and butter.
In a small bowl, mix together sour cream, tapioca, and lemon juice.
Put 1/2 of the crumb mixture into the unbaked pie shell.
Put peaches into the pie shell.
Spread sour cream mixture evenly onto peaches.
Top off with the remaining crumb mixture.
Bake in the oven at 425 ° F for 10 minutes.
Lower oven to 350 ° F and bake for an additional 30 minutes.
