Beets 'n Pineapple Recipe

Description:  Okay, you and your family love beets. But, there just isn't enough different recipes. Your family should enjoy this uniquely different recipe.


  • 2 pounds beets, sliced

  • 1 pound can pineapple chunks, drained

  • 1/2 cup pineapple juice

  • 2 Tablespoons cornstarch

  • 2/3 cups water or beet juice

  • 1/4 teaspoon salt

  • 1 Tablespoon vinegar

  • Black pepper, to taste

Preparation Directions:

  1. Pre-heat oven to 350 degrees.

  2. Place beets and pineapple chunks into a 1 1/2 quart casserole dish.

  3. In a saucepan, blend pineapple juice with cornstarch.

  4. Add beet juice, salt, black pepper, and vinegar.

  5. Cook in saucepan until thickened., stirring constantly.

  6. Pour sauce over beets and pineapple.

  7. Bake covered for 1 hour, or until beets are tender.

  8. Serve hot.
