Okay, you and your family love beets. But, there just aren’t enough different beet recipes for your liking. Your family should enjoy this uniquely different recipe. We don’t know who had the idea to combine beets and pineapple, but we’re certainly glad that they did.
Did You Know? Beets are commonly used as a dye for a wide variety of applications. Early American colonists used beets to make pink cake frosting. And, women in 19th century Victorian England used beet juice to add a red shine to their hair.
2 pounds beets, sliced
1 pound can pineapple chunks, drained
1/2 cup pineapple juice
2 Tablespoons cornstarch
2/3 cups water or beet juice
1/4 teaspoon salt
1 Tablespoon vinegar
Black pepper, to taste
Pre-heat oven to 350° F.
Place beets and pineapple chunks into a 1 1/2 quart casserole dish.
In a saucepan, blend pineapple juice with cornstarch.
Add beet juice, salt, black pepper, and vinegar.
Cook in a saucepan until thickened., stirring constantly.
Pour sauce over beets and pineapple.
Bake covered for 1 hour, or until beets are tender.
Serve hot.
Note: You can use canned beets. If so, cook for only 15-20 minutes.
