Vegetable Soufflé Recipe
Description: You will enjoy this Vegetable Soufflé for breakfast,

Cook mixed vegetables, drain and mash or finely chop. Set aside.
In a sauce pan, melt butter, then add flour, stirring until frothy.
Cook until thickened, stirring constantly.
Add vegetables and seasonings.
Add a little beaten egg yolk to the mixture. Slowly continue to add egg yolk,
bringing to a boil.
Remove from heat.
Beat egg whites until stiff.
Fold egg whites into the mixture.
Pour soufflé mixture into a greased 1 1/2 quart baking dish.
Bake at 350 ° F for 40-45 minutes.
