1 cup mixed vegetables
3 Tablespoons butter or margarine
3 Tablespoons flour
1 cup milk
1/4 teaspoon salt
1/8 teaspoon black pepper
3 egg yolks, beaten
3 egg whites, beaten
First, cook mixed vegetables, drain, and mash or finely chop. Set aside.
Next, in a saucepan, melt butter, then add flour, stirring until frothy.
Add milk.
Then, cook until thickened, stirring constantly.
Add vegetables and seasonings.
Add a little beaten egg yolk to the mixture. Slowly continue to add egg yolk, bringing to a boil.
Remove from heat.
Beat egg whites until stiff.
Fold egg whites into the mixture.
Pour soufflé mixture into a greased 1 1/2 quart baking dish.
Bake at 350 ° F for 40-45 minutes.
