Spicy Pumpkin Pudding Recipe Description

This spicy pumpkin pudding recipe is an oldie but goodie. Surely, it will put a smile on your face. Serve it hot, with a scoop of vanilla ice cream on top. There’s nothing better!

Spicy Pumpkin Pudding Ingredients

2 cups flour

1 1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon salt

1 1/2 teaspoons cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ginger

1/8 teaspoon nutmeg

1/2 cup shortening

1/4 cup granulated sugar

3/4 cups light brown sugar

2 eggs

3/4 cup pumpkin puree

1/4 cup molasses

1 cup chopped pecans or walnuts

vanilla ice cream

Directions How to Make Spicy Pumpkin Pudding

  1. Sift together flour, baking powder, baking soda, and all spices.
  2. In another bowl, mix together pumpkin puree and molasses.
  3. In a large mixing bowl, beat shortening, granulated sugar, and brown sugar until light.
  4. Add eggs and beat until light and fluffy.
  5. Slowly, alternately add in flour mixture and pumpkin molasses mixture.
  6. Stir in chopped nuts.
  7. Turn batter into a well-greased pudding mold.
  8. Cover with a tight-fitting lid.
  9. In a large kettle, place a trivet, then the pudding mold.
  10. Add boiling water, coming halfway up the mold.
  11. Cover kettle and bring to a boil.
  12. Reduce to a simmer.
  13. Simmer for 2 1/2 hours.
  14. Wait five minutes, then turn the finished pudding onto a serving plate.
  15. Serve warm with a scoop of vanilla ice cream.

Recipe Tip: The pudding can be refrigerated, then reheated in the oven or microwave before serving.
