Makes: 12-16 pancakes

1 cup all-purpose flour
1/2 cup pumpkin puree, fresh-cooked, or canned
1 Tablespoon sugar
1 cup milk
2 eggs, separated
2 teaspoons baking soda
1/4 teaspoon salt (use less if on a low sodium diet
1/2 teaspoon ground cinnamon
2 Tablespoons vegetable oil
1 – 2 bananas
Tip: For a quicker meal, use pancake mix(boxed), versus a homemade recipe. But, don’t forget to add the bananas!
