This pumpkin cupcake recipe is very easy to make. They are great for Halloween parties and other Fall get-togethers.  For Halloween parties, you can decorate them with candy corn.

Pumpkin Cupcake Ingredients

1/2 cup shortening

2 eggs

1 1/2 cups sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 1/4 cups all-purpose flour

1 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ginger

1 cup pumpkin puree

3/4 cups milk

1/2 cup walnuts

1 can of vanilla frosting

orange food coloring (1 drop red and 5 drops yellow)

Directions How to Make Pumpkin Cupcakes

    1. Pre-heat oven to 350 ° F.
    2. First, in a large bowl, cream shortening, and sugar.
    3. Nest, add in the eggs.
    4. Then, add pumpkin puree and milk.
    5. In a bowl, sift together flour, baking powder, baking soda, and spices.
    6. Mix dry ingredients into the mixture until the batter is smooth.
    7. Stir in chopped walnuts.
    8. Put paper cups into cupcake tins.
    9. Put batter into cupcake tins.
    10. Bake for 25 minutes.
    11. Use a toothpick to test for doneness.
    12. Allow cupcakes to cool.
    13. While cupcakes are cooling off, add orange food coloring to the vanilla frosting, mixing well.
    14. Finally, frost cupcakes with orange frosting.
