1 package of dry yeast
1/4 cup warm water
1 cup mashed potatoes
1/4 cup sugar
1/4 cup shortening
2 eggs
2 cups warm water
1 teaspoon salt
2 cups flour
Dissolve yeast in 1/4 cup of warm water.
Mix together all remaining ingredients, except flour.
Gradually add flour into the mixture, until you can handle the dough. (You might not need all the flour.)
Knead the dough and put it into a greased bowl.
Cover and let rise until it doubles in size.
Knead a second time, and let it rise again.
Grease a cookie sheet.
Cut dough into small biscuits.
Pre-heat oven to 375 ° F.
Bake at 375 ° F for 25 minutes.
