Marinated Vegetables Recipe

Description:  Here's another great way to use some of your fresh home grown vegetables. It's quick and easy, with just a few steps. Don't hesitate to experiment and put a few other fresh garden veggies into the mix.

Vegetable Ingredients:

  • 4 broccoli spears, cut into bits sized pieces

  • 1 small cauliflower, cut into bite sized pieces

  • 8 large mushrooms, sliced

  • 1 Medium green pepper, diced

  • 3 stalks celery, diced

  • 8-10 baby carrots, sliced length wise

  • 1 small onion, minced

Marinade Ingredients:

  • 1/2 cup sugar

  • 2 teaspoons dry mustard

  • 1 teaspoon salt

  • 1/2 cup vinegar

  • 1 1/4 cups vegetable oil

  • 2 teaspoons poppy seeds

How to Make Marinated Vegetables:

  • In a small bowl, mix together the marinade ingredients, set aside.

  • In a large bowl, mix together all the vegetable ingredients.

  • Pour marinade over the vegetables and mix everything together.

  • Marinade for several hours.
