Lima Beans, also called butter beans, have a great taste. Surprisingly, there aren’t a lot of recipes that include them. We think you will enjoy this Lima Bean Tomato Casserole recipe. While this recipe uses canned lima beans and tomatoes, we hope you substitute them with vegetables fresh from your garden.

Did You Know? Lima Beans were named after the capital of Peru. But they have other names, including Butter Bean and Chad Bean. Call them what you will, they are tasty beans.
3 Tablespoons butter or margarine
1/3 cup chopped onions
1 Tablespoon flour
1 teaspoon salt
1/8 teaspoon pepper
1 pound can of tomatoes
1 pound can Lima Beans, drained
2 cups cooked ham, diced
1/2 cup bread crumbs
Pre-heat oven to 425 ° F.
In a frying pan, melt butter.
Add chopped onions and cook 5 minutes until tender.
Blend in flour, salt, and pepper.
Stir in tomatoes.
Cook until thickened, stirring frequently.
Add beans and ham, and heat until bubbly.
Pour into a casserole dish.
Sprinkle bread crumbs on top.
Bake in the oven for 20- 30 minutes, until bread crumbs are browned.
