Traditional Hummus Recipe
Description: Hummus is a made from chickpeas, also called garbanzo
beans. Hummus is popular around the world. This is a traditional
recipe. Don't hesitate to experiment by adding a variety of herbs,
spices and vegetables to this basic recipe
one 16 ounce can of chickpeas (garbanzo beans)
1 clove garlic, peeled
1/4 cup olive oil
2 Tablespoons fresh squeezed lemon juice
2 Tablespoons sesame paste (Tahini)
1 teaspoon ground cumin (optional)
salt and pepper to taste
Open the can of chickpeas, drain and reserve the liquid.
Rinse the chickpeas and place them in a blender or food processor.
Add garlic, olive oil, lemon juice, sesame paste, cumin, salt and
Puree in the blender or food processor until smooth.
Add a little of the reserved chickpea juice, if it is too thick.
Ladle hummus into a serving bowl.
Sprinkle paprika on top.
Sprinkle chives on top.
Refrigerate any leftover.
