Grilled Eggplant Recipe
Description: Grilled Eggplant goes good with pork, beef, chicken
and other poultry.
Serves: 6-8 servings
2 medium eggplants, cut into 1 1/2" slices
1/3 cup vegetable oil
2 cloves garlic, minced
2 Tablespoons lemon juice
2 teaspoons oregano
1/2 teaspoon salt
1 cup shredded mozzarella cheese
Pour vegetable oil into a bowl.
Mix in all ingredients, except eggplant and mozzarella cheese.
Dip slices into mixture and place on grill.
Close grill cover and grill on medium heat for 8-10 minutes, or until tender.
Turn over eggplant slices and brush on oil mixture.
Top with mozzarella cheese.
Cook another couple minutes until cheese has melted.
Suggestion: For a different taste, try using cheddar cheese instead
