 Here’s a real summertime treat. August is a great time to grill vegetables. Grilling them adds a tasty, smoky flavor. This Grilled Summer Vegetables Recipe begins with zucchini and yellow summer squash. In addition to tasting good, the yellow squash adds contrasting color to the mix. Then, other seasonal veggies are added. As a gardener, many different types of vegetables are ripening in your garden right now. We encourage you to alter this recipe by including some or all of them. We like to add a few cherry or grape tomatoes towards the end of the cooking time is a popular addition.

Grilled Summer Vegetables Recipe Ingredients

1 Zucchini

1 yellow squash

2-3 cloves garlic

1 green bell pepper 

1 purple onion

Basting oil

Optional – cherry or grape tomatoes

Recipe Tip: You can also other colors of sweet bell peppers.

Grilled Summer Vegetables Recipe Directions

  1. Slice the zucchini and yellow summer squash into wheels. Then, cut the wheels in half to form a half-moon shape. It makes perfect bite-sized pieces.
  2. Next peel an onion. Thinly slice it. Then, cut the slices in half.
  3. Cut the bell pepper into bite-sized pieces.
  4. Peel the garlic slices. Then, slice them thinly.
  5. Place all of the ingredients into a bowl.
  6. Next, add basting oil and mix it around to coat all of the vegetables. 
  7. Turn on the grill and set it to medium heat.
  8. Use a slotted spoon to scoop the vegetables into a grilling basket. Allow excess oil to drain into the bowl.
  9. Be ready for flames to flare up as the oil drips into the grill This will stop after a while. 
  10. Occasionally turn the vegetables.
  11. About ten minutes before the vegetables are done, add cherry or grape tomatoes, if you prefer to add them.
  12. When vegetables have cooked, remove them from the heat and pour them into a serving bowl.
  13. Serve hot.

Grilling Tip: When adding cherry or grape tomatoes, do so during the last several minutes of cooking.
