Those dandelion weeds in your lawn, are actually a tasty garden green when properly grown. Try this dandelion lettuce salad recipe, and you just might find yourself growing dandelions, as a salad green in your vegetable garden.
Yield: 8 servings

1 head lettuce, washed
1 pint of dandelion greens, washed
1 small onion
1/2 green pepper
1/2 lb. Swiss cheese
4 Tablespoons olive oil
3 Tablespoons vinegar
2 tomatoes, cut into 8 pieces each
2 hard-cooked eggs, sliced
Cut lettuce, dandelion greens, onions, green pepper, and cheese into small, bite-sized pieces.
Add olive oil and vinegar, and toss lightly.
Gently mix in tomatoes and eggs.
Top with homemade salad croutons.
Serve chilled.
