Corn Relish Recipe Description

This is an old-fashioned corn relish recipe. It uses a lot of fresh garden veggies. This old recipe makes a lot of relish, so you can it. You may want to cut all ingredients in half.

Corn Relish Recipe Ingredients

1 dozen ears of corn

1/4 wedge cabbage

1-quart green tomatoes

2 carrots

3 onions

1 cucumber

1 green pepper

1 cup celery

1-quart vinegar

1 cup sugar

1/4 cup salt

1 teaspoon dry ground mustard

1 teaspoon black pepper

1/4 teaspoon turmeric

Recipe Directions

  1. Cut corn kernels from the cobs.
  2. Remove seeds from green pepper and chop.
  3. Clean, peel(as needed), and chop all other vegetables.
  4. Combine all vegetables and 1/2 of the vinegar.
  5. In a small bowl, combine the other half of the vinegar and the remaining ingredients.
  6. Add to the vegetables and mix together.
  7. Heat to boiling and simmer for 40 minutes.
  8. Fill clean pints jars and seal.
