Citrus Spinach Salad Recipe Ingredients

16 oz. fresh spinach, wshed and dried

1/2 red onion thinly sliced

1 orange, peeled and separated into sections

2 Tablespoons orange juice

2 Tablespoons white vinegar

2 teaspoons Dijon mustard

3 teaspoon extra virgin olive oil

grated parmesan or Romano cheese

Salad croutons

Recipe Directions

  1. Break spinach into small, bite-sized pieces.

  2. Cut orange sections in half.

  3. In a large bowl, combine spinach, onion, and orange sections.

  4. In a small bowl, mix together orange juice, mustard, and vinegar.

  5. Whisk in olive oil.

  6. Pour mixture over spinach.

  7. Toss to mix salad.

  8. Sprinkle grated parmesan or Romano cheese on top.

  9. Serve with Homemade Salad Croutons.
