You can, and will, enjoy cherry cookies any time of the year. They taste especially good around the holidays. Even though this cherry cookies recipe does not use fresh cherries, you will still enjoy them.

Yield: 4 to 4 1/2 dozen cookies

2 cups sifted flour
1/2 teaspoon baking soda
1 teaspoon salt
1 cup brown sugar
3/4 cup shortening
1 egg
1 teaspoon vanilla
2 Tablespoons milk
1/2 cups chopped nuts
1/2 cup ccuped candied or maraschino cherries
1/2 cup coconut flakes
Pre-heat oven to 375 ° F.
Sift together flour, soda, and salt into a mixing bowl.
Mix in sugar, shortening, and egg.
Add vanilla and milk, stirring to combine.
Beat for 2 minutes.
Stir in nuts, cherries, and coconut.
Drop spoonfuls of dough onto greased cookie sheet.
Bake in the oven for 12 – 15 minutes.
Cool the cookies on a wire rack.
