This celery stuffing Recipe can be used with just about any meats. It seems especially good with poultry. It is a very old recipe.

1/2 cup bacon fat
1 Tablespoon parsley flakes
2 onions, chopped
2 quarts breadcrumbs
1 quart, chopped celery stalks and tops
1 tea,spoon salt
1 teaspoon black pepper
Water
In melted bacon, cook onions for a few minutes.
Add celery, breadcrumbs, salt, and pepper.
Mix together.
Add a little water at a time until it reaches a nice consistency.
Serve hot, by itself, or stuff it into your favorite meat.
