6 sweet potatoes, peeled
2 Tablespoons butter or margarine
1 cup firmly packed brown sugar
1 1/4 cups water
1/2 teaspoon salt
Pre-heat oven to 350 ° F.
Cut potatoes into 1/2-inch-thick slices.
Arrange potato slices in a 2-quart casserole dish.
Mix together in the remaining ingredients.
Cover and bake for 40 minutes.
Remove cover, and continue to bake for an additional 30 minutes or longer, until potatoes are tender.
Lightly, sprinkle your favorite grated cheese on top just before serving. However, be careful not to use too much.
