Creamed Broccoli on English Muffins Recipe
Description: Creamed broccoli on English muffins is good for lunch
or dinner. You can also use buns or other toasted breads, in place of the
English muffins, if you prefer.
12 ounces of broccoli(fresh or frozen)
4 Tablespoons butter or margarine
1 teaspoon paprika
1 teaspoon salt
pepper, to taste
4 Tablespoons flour
1 1/4 cups evaporated milk
3/4 cups chicken stock
4 English muffin halves, toasted and buttered
Coarsely chop, cook, and drain broccoli.
Melt butter in a saucepan.
Blend in paprika, salt, pepper and flour.
Combine evaporated milk and chicken stock.
Stir over low heat until sauce is thickened and smooth.
Serve hot on toasted and buttered English muffin halves.
