Take some fresh garden-grown asparagus, along with some minced veggies, and voila, you have a delicious hit. Try variations of this baked asparagus and vegetables recipe, with other veggies, including beans, cabbage, cauliflower, and squash. You’ll quickly discover that almost all vegetables taste great when they are baked with Asparagus.

4 cups fresh asparagus
1/4 cup water
1/2 teaspoon salt
1 cup diced celery
1 teaspoon minced onion
1 teaspoon minced green pepper
3 Tablespoons butter or margarine
1 teaspoon sugar
1/4 cup grated cheddar cheese (try other cheeses, too)
Pre-heat oven to 350° F.
Place all ingredients, except cheese, into a covered casserole dish.
Bake in the oven for 30-40, until asparagus is tender.
Sprinkle cheese on top of the asparagus and bake another 10 minutes to melt the cheese.
