This grilled eggplant recipe is a summertime favorite. Grilled Eggplant goes good with pork, beef, chicken, and other poultry.
Serves: 6-8 servings
Did You Know? Eggplants are a member of the poisonous nightshade family. As a result, they were believed to be poisonous. while the fruit is edible, other parts of the plant are not.
2 medium eggplants, cut into 1 1/2″ slices
1/3 cup vegetable oil
1 – 2 cloves garlic, minced
2 Tablespoons lemon juice
2 teaspoons oregano
1/2 teaspoon salt
1 cup shredded mozzarella cheese
Pour vegetable oil into a bowl.
Mix in all ingredients, except eggplant and mozzarella cheese.
Dip slices into mixture and place on grill.
Close grill cover and grill on medium heat for 8-10 minutes, or until tender.
Turn over eggplant slices and brush on the oil mixture.
Top with mozzarella cheese.
Lastly, cook another couple of minutes until the cheese has melted.
Serve grilled eggplant hot.
Suggestion: For a different taste, try using cheddar cheese instead of mozzarella.
