Most of us use cucumbers fresh and uncooked in salads, by themselves, or in cold recipes. Cucumbers can be used in cooking, too, as you will see in this fried cucumber recipe. This tasty recipe will make you think of cooking with them more often and in different, and perhaps unconventional ways.
Did You Know? Slicing cucumbers are harvested by hand. But, pickling cucumbers are harvested by machine.
3 cucumbers
1 teaspoon salt
1 cup breadcrumbs
egg, beaten
1 cup vegetable oil
1 Tablespoon lemon juice
Wash and peel cucumbers.
Slice into 1/4″ thick wheels.
In a bowl, cover cucumber slices in water, adding salt.
Let stand for 20 minutes.
Drain and pat dry.
Dip cucumbers into the egg.
Dip cucumber into breadcrumbs.
Fry cucumbers in oil for 10 minutes, browning each side.
Remove from the pan, and sprinkle with lemon juice.
Serve hot.
