Vegetable Kabobs Recipe

Description: This is the perfect vegetable to prepare as your garden veggies ripen. And, cooking them up on the grill is always special.


1 pound Zucchini, cut into 1/2" slices
1 pound Summer Squash, cut into 1/2" slices
2 green peppers, cut into 1 1/2" pieces
20-24 Cherry Tomatoes
20-24 whole Mushrooms (not too big)
1 cup Italian dressing
1 tablespoon garlic, crushed or finely minced

Preparation Directions:
  1. Alternate vegetables onto six skewers.
  2. In a small bowl, mix Italian dressing and garlic.
  3. Brush Italian dressing and garlic onto vegetables.
  4. Grill on medium heat, turning frequently.
  5. Brush more Italian dressing onto the kabobs a few times as they grill.
  6. Cook about 10-15 minutes, until vegetables are crisp on the outside and tender on the inside.
  7. Serve hot.
