Here’s a great grilling recipe for zucchini or other summer squash. This grilled stuffed zucchini squash recipe tastes great with zucchini, summer squash, and other vegetables picked fresh from your home garden. Homegrown is always the best!
Don’t hesitate to include or substitute other garden vegetables, if they are ready for harvest.

2 small zucchini or summer squash
1 cup fresh or frozen whole kernel corn
!.2 cup coarsely chopped green pepper
1/4 cup chopped onion
1 – 2 cloves garlic, minced
2 Tablespoons butter or margarine
1/2 cup coarsely chopped tomato
1/4 cup grated parmesan cheese
2 Tablespoons Bold and Spicy Mustard
/14 teaspoon salt
1/4 teaspoon basil leaves
Cut squash in half, lengthwise.
Remove the pulp from the center of each half. Leave 1/4 inch for the shell. Set aside.
Coarsely chop the removed pulp.
In a skillet, cook zucchini pulp, corn, onion, green pepper, and garlic in butter or margarine on medium heat.
Cook until tender-crisp.
Stir in tomato, parmesan cheese mustard, salt, and basil.
Spoon mixture into the squash shells.
Wrap in aluminum foil and grill over medium heat for 20-30 minutes, turning occasionally.
Tip: You can also cook this in the oven. Preheat the oven to 350° F. Bake for 25-30 minutes.
