1 small onion, chopped
2 tablespoons vegetable oil
2 cups okra, sliced or lightly chopped
4 – 5 tomatoes, peeled and diced, or a 16 ounce can
1/4 teaspoon salt
a dash or two of ground black pepper
First, brown chopped onions lightly in vegetable oil.
Next, add the remaining ingredients and cook until okra is tender, and the mixture thickens, about 10-15 minutes.
Stir occasionally.
Serve hot.
