Spaghetti squash is a bit unique, for both gardeners and cooks. Try this recipe with your family. Kids like the novel idea of eating this “spaghetti”. So, don’t tell them it’s a squash. Then, they just might like this spaghetti squash cheese bake recipe.
Serves: 4

1 1/2 cups Spaghetti Squash, cooked and fluffed
8 ounces Cheddar cheese **
4 slices of Bacon, cooked and crumbled
1/2 teaspoon Parsley
Salt and Pepper to taste
** If serving to kids, you can substitute American cheese or create your own blend of cheeses.
Pre-heat oven to 375 ° F.
Cook spaghetti squash by baking in the oven for about 30 minutes.
Poke a knife into the squash, to see if the pulp inside is soft.
Remove from oven and allow to cool a little.
Remove squash pulp and fluff as you remove it.
Combine all ingredients with fluffed up spaghetti squash.
Pour into a shallow baking dish.
Heat in the oven for 10-15 minutes until cheese melts.
Serve hot.
