Simple Potato Soup Recipe
Description: Potato soup is hearty. It will taste good on a cold winter's
day. This is a quick and easy recipe.
Yield: about 5 cups.
Ingredients:

3 tablespoon butter or margarine

1 onion, peeled and diced
-
1/2 cup diced celery
-
1 clove garlic, minced
-
2 cups chicken stock
-
2 cups milk
-
4 cups potatoes, peeled and diced
-
1/2 cup carrot, peeled and diced
-
1/2 teaspoon salt
-
1/8 teaspoon pepper
-
1 teaspoon parsley flakes
-
Crumbled bacon
-
Grated parmesan or romano cheese
Preparation Directions:

Melt butter in a skillet.

Add onion, and garlic.

Sautee until onions are soft.

In a large soup pot, add chicken broth, potatoes, carrots, celery, and sauteed
onions and garlic.

Add salt, pepper and parsley.

Bring soup to a boil.
-
Lower heat to simmer and cook until potatoes and carrots are soft, stirring
occasionally.

Add milk and heat without boiling.
-
Pour hot soup into individual soup cups or bowls.

Top with a little grated cheese, and crumbled bacon.

Serve with Saltine crackers
