Simple Potato Soup Recipe

Description: Potato soup is hearty. It will taste good on a cold winter's day. This is a quick and easy recipe.

Yield: about 5 cups.

Ingredients:

  • 3 tablespoon butter or margarine

  • 1 onion, peeled and diced

  • 1/2 cup diced celery

  • 1 clove garlic, minced

  • 2 cups chicken stock

  • 2 cups milk

  • 4 cups potatoes, peeled and diced

  • 1/2 cup carrot, peeled and diced

  • 1/2 teaspoon salt

  • 1/8 teaspoon pepper

  • 1 teaspoon parsley flakes

  • Crumbled bacon

  • Grated parmesan or romano cheese

Preparation  Directions:

  • Melt butter in a skillet.

  • Add onion, and garlic.

  • Sautee until onions are soft.

  • In a large soup pot, add chicken broth, potatoes, carrots, celery, and sauteed onions and garlic.

  • Add salt, pepper and parsley.

  • Bring soup to a boil.

  • Lower heat to simmer and cook until potatoes and carrots are soft, stirring occasionally.

  • Add milk and heat without boiling.

  • Pour hot soup into individual soup cups or bowls.

  • Top with a little grated cheese, and crumbled bacon.

  • Serve with Saltine crackers
