Description:  Potato skins are easy to make. With just a baked potatoes, and a few of your favorite "additives", you have a great snack.

Contributed By: Bob M., Rochester, NY

Yield: 4 to 4 1/2 dozen cookies

  • 4-6 medium sized potatoes

  • American or cheddar cheese, grated

  • bacon, crisply cooked, crumbled

  • sour cream

  • chives

  • parsley flakes

Note: Don't use artificial bacon bits. It just doesn't taste right.

Preparation Directions:

  1. Bake potatoes in oven at 350 F until done.

  2. Remove potatoes from oven, cut lengthwise, and scoop out potato, leaving a little in the shell.

  3. Add a thick layer of cheese.

  4. Top it off with crumbled bacon pieces.

  5. Cook for a few minutes under the broiler, until cheese has thoroughly melted.

  6. Remove from oven and serve hot with sour cream, fresh chives, and fresh parsley flakes on the side.

Tip: You can also use the microwave to melt the cheese. But, it is better under the broiler.
