How often do you have leftover mashed potatoes? If you’re like most people, the answer is every time you make them. Making this Mashed Potato Patties recipe is a good way to use up those leftovers.
Yield: 6 patties

2 cups mashed potatoes
an egg, slightly beaten
1 tablespoon chopped onion
1 tablespoon chopped green pepper
2 tablespoons vegetable oil
Combine all ingredients except the vegetable oil.
Shape potatoes into six patties.
Put oil in a frying pan.
Brown patties in hot oil, about 3-4 minutes per side.
Serve hot.
