Safely light pumpkins

Glazed Parsnips Recipe

Description: This is an old fashioned, easy to prepare parsnip recipe.  

Serves: 6


  • 10-12 medium parsnips

  • 1/4 cup butter

  • 1/4 cup brown sugar

  • 1 teaspoon grated orange rind

  • 1/3 cup orange juice

  • 1 Tablespoon lemon juice

  • 1/4 teaspoon nutmeg

  • 1/2 teaspoon salt

  • 1/4 teaspoon parsley flakes

Preparation  Directions:

  • Peel parsnips.

  • Cut into wheels.

  • Cook in boling salt water, until tender.

  • Drain.

  • Melt butter in a large skillet.

  • Add remaining ingredients, except parsley, and stir until thoroughly mixed.

  • Add parsnips.

  • Cook on low heat for 5 - 10 minutes, stirring frequently.

  • Pour into a serving dish.

  • Sprinkle parsley on top.

  • Serve hot.
