Get out the skewers and let’s get grilling this vegetarian treat. You don’t have to be a vegetarian to enjoy it. This kabob will go well with just about any grilled meat. We do think it goes especially well with grilled ham. Make this Onion and Carrot Kabobs recipe tonight.
Did You Know? Ancient Egyptians worshipped onions. They believed the onion’s concentric rings and spherical shape were symbols of eternity.
10 medium onions, peeled
6 large carrots, peeled and cut into thirds
1/4 cup molasses
2 tablespoons prepared mustard.
1 Tablespoon vinegar
Bring a pot of water to boil.
Place onions and carrots into boiling water.
Boil until they begin to get tender, about 10 to 15 minutes.
While vegetables are boiling, mix all other ingredients together in a bowl.
Drain vegetables and allow them to cool enough to handle. Run them over cold water, if you are in a hurry.
Put onions and carrots onto skewers, alternating the onions and carrots.
Place kabobs on the grill.
Baste with molasses mixture two or three times while kabobs are cooking.
Grill until tender.
