Horesradish Mashed Potatoes Recipe

Description: This recipe adds a little "zip" to mashed potatoes.


Ingredients:

5 pounds Potatoes
2 cups Heavy Cream
2 cups Milk
1 Tbs Butter or margarine
1/2 cup Horseradish, peeled and grated
1/2 tsp. Parsley
Salt and Pepper, to taste


Preparation Directions:
  1. Peel potatoes and boil in a large pot until soft.
  2. While potatoes are cooking, add cream, milk, butter and horseradish in a saucepan.
  3. Add salt and pepper, if desired.
  4. Simmer over medium heat for 5-10 minutes, stirring occasionally. Turn off heat and set aside.
  5. When potatoes are done, drain off water and mash until smooth.
  6. Slowly add in creamed horseradish mixture and blend together well.
  7. Pour mashed potatoes into a serving bowl.
  8. Sprinkle parsley over the top. 
  9. Serve hot.
