This is a very old-fashioned recipe. You will see it even calls for a little bacon fat. It’s really for flavor. If you are health conscious, brown the onion and garlic in vegetable oil instead. Either way, the Barbecued Lima Beans recipe is quite tasty. And it goes well with any grilled meats.

2 cups fresh or dry lima beans (if dry beans, soak for several hours to soften)
1/2 pound sliced bacon
1 teaspoon salt
1 onion, sliced
1 clove of garlic, minced
2 Tablespoons bacon fat
2 Tablespoons prepared mustard
2 teaspoons Worcestershire sauce
1 teaspoon oregano
1 (10 1/2 oz.) can of tomato soup
1/3 cup vinegar
Take 1/2 of the bacon and cube it.
Cook beans and cubed bacon in water with 1 teaspoon of salt.
Cook until the beans are tender.
Drain, reserving 1 1/2 cups of liquid. Set beans aside.
Brown onion and garlic in bacon fat.
Add prepared mustard, Worcestershire sauce, oregano, tomato soup, vinegar, and 1 1/2 cups of liquid.
Simmer for 15 minutes.
In a casserole dish, alternate layers of beans and sauce.
Cover with remaining strips of bacon.
Bake at 400 ° F for 30 minutes.
