Lima Bean - Tomato Casserole Recipe

Description:  Lima Beans, also called butter beans, have a great taste. Surprisingly, there isn't a lot of recipes that include them. We think you will enjoy this Lima Bean recipe. While this recipe uses canned lima beans and tomatoes, we hope you substitute with vegetables fresh from your garden.

Serves: 6


  • 3 Tablespoons butter or margarine

  • 1/3 cup chopped onions

  • 1 Tablespoon flour

  • 1 teaspoon salt

  • 1/8 teaspoon pepper

  • 1 pound can tomatoes

  • 1 pound can Lima Beans, drained

  • 2 cups cooked ham, diced

  • 1/2 cup bread crumbs

Preparation Directions:

  1. Pre-heat oven to 425 degrees.

  2. In a frying pan, melt butter.

  3. Add chopped onions and cook 5 minutes until tender.

  4. Blend in flour, salt and pepper.

  5. Stir in tomatoes.

  6. Cook until thickened, stirring frequently.

  7. Add beans and ham, and heat until bubbly.

  8. Pour into a casserole dish.

  9. Sprinkle bread crumbs on top.

  10. Bake in oven for 20- 30 minutes, until bread crumbs are browned.
