Lettuce Soup Recipe Description

We had always thought that there was no recipe that used lettuce as a main ingredient. We were proved wrong, with this tasty lettuce soup recipe. It’s perfect when your lettuce crop peaks, and you have more than you can use for your salads.

Lettuce Soup Recipe Ingredients

1 Cos Romaine lettuce

1 Iceberg lettuce

3 teaspoons fresh ginger, finely chopped

4 shallots, finely chopped

1-liter chicken stock

2 tablespoons olive oil

salt

pepper

Recipe Directions

  1. Fry the ginger and shallots in olive oil in a heavy casserole dish. Make sure they do not brown at all.
  2. Chop the lettuces into fine shreds.
  3. Deglaze the pan with some of the chicken stock then add the rest.
  4. Add the lettuce, stirring to make sure it doesn’t stick to the sides or bottom of the pan.
  5. Keep stirring until the lettuce starts to wilt.
  6. Simmer gently for about an hour.
  7. Remove half of the lettuce and some of the stock and puree in a blender.
  8. Return to the pan, add salt and pepper to taste.
  9. Reheat and serve immediately.
