French Fried Eggplant in Fritter Batter Recipe
Description: This is a very old recipe, that's sure to please. The
original recipe called for frying in fat! French Fried eggplant makes a great
Serves: 6-8 servings
Pare eggplant and cut into finger length slices.
Soak eggplant in salt water for 1 hour
While eggplant is soaking, prepare fritter batter.
In a mixing bowl, sift together dry ingredients.
Add milk and well-beaten egg.
Mix together thoroughly.
Preheat vegetable oil to 375 degrees.
Drain and thoroughly dry eggplant. on paper towels.
Dip eggplant into fritter batter.
Fry until golden brown.
Remove eggplant, and allow to rain on a paper towel.
Serve with remoulade sauce, ranch dressing, blue cheese or other dipping
Try the fritter batter with other garden vegetables, like zucchini, other
squashes, or onion strips.
