Try this dandelion lettuce salad recipe, and you just might find yourself growing dandelions, as a salad green in your vegetable garden. Some people shy away from this unique salad. However, if you’re ever lost in the woods, you won’t starve when you discover them growing in a field.
Yield: 8 servings

1 head lettuce, washed
1 pint of dandelion greens, washed
small onion
1/2 green pepper
1/2 lb. Swiss cheese
4 Tablespoons olive oil
3 Tablespoons vinegar
2 tomatoes, cut into 8 pieces each
2 hard-cooked eggs, sliced
Cut lettuce, dandelion greens, onions, green pepper, and cheese into small, bite-sized pieces.
Add olive oil and vinegar, and toss lightly.
Gently mix in tomatoes and eggs.
Top with homemade salad croutons.
Serve chilled.
