I don’t know about you, but I am always looking for a good, new recipe to use up all those cucumbers coming out of the garden. This Chinese Cucumber Salad recipe is certainly a good one!
Servings: 4
Did You Know? Slicing cucumbers are harvested by hand. But, pickling cucumbers are harvested by machine.
2 cucumbers
3 Tablespoons vinegar
1/4 cup soy sauce
1 teaspoon MSG (Omit, if preferred)
3 Tablespoons Sesame Oil
1 Tablespoon sesame seeds
Slice unpeeled cucumber, into paper-thin slices. Mix in vinegar, soy sauce, and MSG.
Put in refrigerator to chill and marinate for several hours.
Add sesame oil and mix.
Sprinkle sesame seeds on top.
Serve chilled.
