Chinese Asparagus Salad Recipe

Description:  Don't limit this salad, by just pairing it with other Chinese dishes. It goes well with a wide variety of dishes and cuisines.

Serves: 4


  • 2 pounds  fresh asparagus spears

  • 2 Tablespoons soy sauce

  • 1 Tablespoon sesame oil (or substitute with olive oil)

  • 1/4 teaspoon sugar

  • lettuce leaves

Preparation Directions:

  1. Wash asparagus and cut diagonally into bite-size pieces. (about an inch)

  2. Cook in boiling water until just tender, about 3-4 minutes.

  3. Drain and place in a bowl.

  4. Mix together soy sauce, sesame oil and sugar.

  5. Pour mix over asparagus to marinade.

  6. Chill in the refrigerator for 1 hour.

  7. Serve cold over a bed of lettuce leaves.
