Are you in the mood for Chinese tonight!? This is a great recipe to use as part of your meal. But, don’t limit this salad, by just pairing it with other Chinese dishes. This Chinese Asparagus Salad recipe goes well with a wide variety of dishes and cuisines.

2 pounds of fresh asparagus spears
2 Tablespoons soy sauce
1 Tablespoon sesame oil (or substitute with olive oil)
1/4 teaspoon sugar
lettuce leaves
Wash asparagus and cut diagonally into bite-size pieces. (about an inch)
Cook in boiling water until just tender, about 3-4 minutes.
Drain and place in a bowl.
Mix together soy sauce, sesame oil, and sugar.
Pour mix over asparagus to marinade.
Chill in the refrigerator for 1 hour.
Serve cold over a bed of lettuce leaves.
