Chicken Ala King Recipe

Description:  This is a main course meal fit for a king.

Yield: 6 servings


Ingredients:

  • 1 cup green peas

  • 1/4 cup green pepper, chopped

  • 1/3 cup boiling water

  • 2/3 cup flour

  • 1 cup cold milk

  • 2 cups chicken broth

  • 1 1/2 teaspoons salt

  • 2 cups diced chicken

  • 1- 4 ounce can mushroom pieces, drained and chopped

  • 1 tablespoon pimento, chopped

  • Cooked minute rice, or long rice


Preparation Directions:

  1. Cook peas, green pepper and onions in boiling water in covered pan for 5 minutes.

  2. Drain and save liquid.

  3. Blend flour with cold milk.

  4. Add vegetable cooking liquid, chicken broth, and seasonings.

  5. Slowly stir in flour mixture.

  6. Bring to a slow boil.

  7. Cook 1 minute, stirring constantly.

  8. Add chicken, cooked vegetables, mushrooms and pimentos.

  9. Heat thoroughly.

  10. Serve hot over cooked minute rice or long rice.
