Did you know? Butternut squash is a “winter squash”, But, they are not grown in the winter. They get this name as they store well for long periods of time. So, you can be eating it all winter long! 

Butternut Squash Au Gratin Recipe Ingredients

2Large Butternut Squash
1/2 Purple Onion (or yellow onion), peeled and sliced thin
1 1/2 cups. Swiss Cheese, grated
1 1/2 cupsRomano Cheese, grated
1 Tbs.Garlic, minced
1/2 tsp.Nutmeg
2 cups Heavy Cream
4 Tbs.Butter or Margarine
1/2 cupBreadcrumbs
 Salt and Pepper, to taste

Butternut Squash Au Gratin Recipe Directions

  1. Pre-heat the oven to 350° Fahrenheit.
  2. Cut Butternut squash into halves. Peel the squash and remove the seeds.
  3. Cut squash into 1/2-inch pieces.
  4. In a bowl, stir together grated Swiss cheese and Romano cheese. Set aside.
  5. In a large pot, mix together the squash pieces, heavy cream, nutmeg, and garlic.
  6. Add Salt and Pepper to taste. Use sparingly, as it can be added at the table.
  7.  Bring to a boil.
  8. Remove from heat, and fold 1/2 of the cheese mixture into the squash.
  9. Butter or margarine the bottom of a shallow glass baking dish.
  10. Pour mixture into the baking dish, and spread out evenly.
  11. Mix bread crumbs into the remaining cheese mixture. Then, sprinkle this over the top.
  12. Cover with foil, and bake for 30-35 minutes, until soft.
  13. Remove foil and bake for about 15 minutes, until the top is brown.
  14. Serve hot.

Kitchen Cleaning Tip

Are your baking sheets looking a bit grungy?  You can restore them with baking soda and hydrogen peroxide.

Sprinkle the sheet with baking soda. Then, lightly spray it with hydrogen peroxide. Next, sprinkle a little more baking soda on top. 

Let it sit for an hour or two. Finally, wash the sheet off and see the difference!
