This casserole is easy to make.
Yield: 4 cups

10 ounces Artichoke Hearts, cooked and drained
4 ounces sliced Mushrooms
1 tablespoon Margarine
1 can (11oz.) Cheddar Cheese soup
1/2 cup milk
2 Tbs. cooking Sherry
1 1/2 cups Rice, cooked
Paprika
Salt and Pepper, to taste
Preheat oven to 350° F.
In a saucepan, brown the mushrooms in margarine.
Add the margarine, soup, milk, and cooking sherry.
In a 1-quart casserole dish, combine the rice, artichokes, and soup mixture.
Bake in the oven for 30 minutes.
Remove from oven and sprinkle Paprika on top.
Serve hot.
Sprinkle parmesan cheese on top of the casserole just before serving.
