Vegetable Souffle Recipe

Description: You will enjoy this Vegetable Souffle for breakfast, lunch, or dinner. It's a great way to get your family to eat more veggies!

Ingredients:

  • 1 cup mixed vegetables

  • 3 Tablespoons butter or margarine

  • 3 Tablespoons flour

  • 1 cup milk

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

  • 3 egg yolks, beaten

  • 3 egg whites, beaten

Preparation  Directions:

  • Cook mixed vegetables, drain and mash or finely chop. Set aside.

  • In a sauce pan, melt butter, then add flour, stirring until frothy.

  • Add milk.

  • Cook until thickened, stirring constantly.

  • Add vegetables and seasonings.

  • Add a little beaten egg yolk to the mixture. Slowly continue to add egg yolk, bringing to a boil.

  • Remove from heat.

  • Beat egg whites until stiff.

  • Fold egg whites into the mixture.

  • Pour souffle mixture into a greased 1 1/2 quart baking dish.

  • Bake at 350 degrees for 40-45 minutes.

Recipe Tip: Add to this recipe, cheese, chives, onions or other seasonings.
