Vegetable Potpourri Recipe
Description: This recipe is a potpourri of fresh garden vegetables.
Don't hesitate to include any other veggies that are ripe in your garden.
4 slices bacon
2 onions, peeled and chopped
3 summer squash (or zucchini), cut into 1/2" thick slices
1 green pepper, chopped
1 1/2 cups corn kernels
3 tomatoes, coarsely chopped
1 teaspoon chili powder
1 teaspoon oregano
1/2 teaspoon salt
1/ teaspoon black pepper
1 cup cheddar cheese, grated
Brown bacon in a skillet, set aside.
Saute onions in bacon drippings.
In a baking dish, add corn, green pepper and and summer squash.
Pour onions and spices over the vegetables.
Stir to mix together.
Cover and bake for 30 minutes at 350 degrees.
Uncover, stir, then bake uncovered for another 30 minutes.
Remove from oven.
Crumble bacon. Spread across vegetables.
Sprinkle grated cheese on top.
Return to oven just long enough to melt cheese.
