Homemade Tomato Provencale Juice

Tomato Provencale is a mid summer dish. As soon as your garden tomatoes start to ripen, it's time to begin making this dish.


Tomato Provencale Ingredients:

  • 4 large tomatoes

  • 3 tablespoons extra virgin olive oil

  • 1/4 teaspoon salt

  • pepper to taste

  • 1 clove garlic, minced

  • 1 Tablespoon chopped parsley

  • 2 Tablespoons bread crumbs

How to Make Tomato Provencale:

  • Cut tomatoes in half crosswise, and remove seeds.

  • Warm oil in a skillet and saute tomatoes, cut side down, for 3 minutes.

  • Turn over tomatoes and sprinkle with salt and pepper. Saute for another 3 minutes.

  • Add minced garlic to the skillet. and saute for 2 minutes.

  • Place tomatoes onto a warm serving dish and sprinkle with parsley.

  • Add bread crumbs to skillet and cook until brown, stirring frequently.

  • Drain onto paper towels, and sprinkle bread crumbs over the tomatoes.

  • Serve warm.
