Homemade Tomato Provencale Juice
Tomato Provencale is a mid summer dish. As soon as your garden tomatoes start
to ripen, it's time to begin making this dish.
Tomato Provencale Ingredients:

4 large tomatoes

3 tablespoons extra virgin olive oil

1/4 teaspoon salt

pepper to taste
-
1 clove garlic, minced
-
1 Tablespoon chopped parsley

2 Tablespoons bread crumbs
How to Make Tomato Provencale:

Cut tomatoes in half crosswise, and remove seeds.

Warm oil in a skillet and saute tomatoes, cut side down, for 3 minutes.

Turn over tomatoes and sprinkle with salt and pepper. Saute for another 3
minutes.

Add minced garlic to the skillet. and saute for 2 minutes.

Place tomatoes onto a warm serving dish and sprinkle with parsley.

Add bread crumbs to skillet and cook until brown, stirring frequently.

Drain onto paper towels, and sprinkle bread crumbs over the tomatoes.

Serve warm.
