Pumpkin Banana Pancakes Recipe Description

Pumpkin Banana Pancake Recipe Ingredients

1 cup all-purpose flour

1/2 cup pumpkin puree, fresh-cooked, or canned

1 Tablespoon sugar

1 cup milk

2 eggs, separated

2 teaspoons baking soda

1/4 teaspoon salt (use less if on a low sodium diet

1/2 teaspoon ground cinnamon

2 Tablespoons vegetable oil

1 – 2 bananas

Directions How to Make Pumpkin Banana Pancakes

  1. First, combine dry ingredients and spices in a bowl.
  2. Next, in a second bowl, whisk together, pumpkin puree, egg yolks, milk, and vegetable oil.
  3. Then, stir wet ingredients into dry ingredients.
  4. Use a mixer to beat egg whites until peaks form. Then, fold them into the batter.
  5. Slice banana wheels from bananas just before cooking.
  6. Pour  1-2 tablespoons of batter onto a greased griddle.
  7. Place 3-5 banana wheels onto the pancake. Flip pancake when browned, and cook bottom side.
  8. Serve with syrup.

Tip: For a quicker meal, use pancake mix(boxed), versus a homemade recipe. But, don’t forget to add the bananas!
