2 Idaho potatoes
1/4 cup milk
2 Tablespoons butter or margarine
1 teaspoon chopped chives
Salt and pepper to taste
Bake potatoes in the oven at 400 ° F for one hour.
Cut potatoes lengthwise, and scoop out the pulp.
Mash potatoes, milk, butter, salt, and pepper.
Blend in chives.
Pour mashed potatoes into the potato skins.
Garnish with paprika.
Wrap skins in aluminum foil and freeze.
When ready to use, remove from the freezer and allow to partially thaw.
Brown in the oven at 350 ° F for one hour. Or, remove aluminum foil and microwave (times vary)
Tip: You can also add cheddar cheese to the mashed potato mixture.
